Un refrigeratore d’acqua monoblocco con condensazione ad aria, ventilatori elicoidali e compressori scroll a servizio del birrificio artigianale Vertiga a Rossano Veneto (VI)

Il cliente necessitava di un’unità per la produzione di acqua refrigerata a -2°C per poter garantire sempre la corretta temperatura nelle varie fasi di produzione della birra.

Si è scelto di installare un chiller Compact-Y MD TCAEY 250 in configurazione BT, unità con elevata efficienza ai carichi parziali, in versione silenziata, con pompa integrata a bassa prevalenza e tubazioni idrauliche interne in Acciaio Inox 304.

Al termine del suo processo di cottura (ad una temperatura di circa 100°C) la birra viene fatta passare all’interno di uno scambiatore di calore alimentato in controcorrente dall’acqua precedentemente raffreddata dall’unità Rhoss (In 3°C Out -2°C) al fine di controllare la temperatura di uscita della birra (tra i 10°-20°C in funzione della tipologia).

Finita questa fase la birra viene stoccata nei fermentatori dove l’acqua refrigerata prodotta dal Chiller contrasta l’effetto di surriscaldamento generato dal processo di fermentazione, cercando di mantenere la birra ad una temperatura più stabile possibile: in questo modo tutti i lieviti/enzimi possono lavorare nelle condizioni migliori.

Finita la fase di fermentazione la Birra viene portata a circa 1°C per permettere la sedimentazione delle parti in sospensione e completare il processo di maturazione.

A packaged air-cooled water chiller with axial fans and scroll hermetic compressors serving the Vertiga brewery in Rossano Veneto (VI).

The customer needed an unit for the production of chilled water at -2°C in order to guarantee the correct temperature during the different stages of beer production.

The decision was to install a Compact-Y MD TCAEY 250 chiller in low temperature configuration, a unit with high efficiency at partial loads, in a silenced version, with an integrated pump with basic head pressure and internal hydraulic piping in 304 stainless steel.

At the end of the brewing process (at a temperature of approximately 100°C) the beer is passed through a heat exchanger fed in counterflow by the water previously cooled by the Rhoss unit (In 3°C Out -2°C) in order to control the outlet temperature of the beer (between 10°-20°C depending on the type).

When this phase is concluded the beer is stored in the fermenters where the chilled water produced by the Chiller counteracts the overheating effect generated by the fermentation process, trying to keep the beer at a temperature as stable as possible: in this way all the yeasts/enzymes can work at the best conditions.

After the fermentation phase the beer is brought down to about 1°C to allow the sedimentation of the suspended parts and complete the maturation process.
